Colfiorito Lentils come in different pale colours: brown, mauve, olive, orange, speckled.
They have thin skin and a nutty flavour.
Colfiorito is a town on a mountain plateau in the Apennine Mountains, on the border Umbria and the Marche, just south-east of Assisi. The land is rotated between lentils and chickpeas.
The lentils are harvested at the end of July and beginning of August.
Colfiorito is having a hard time breaking into the lentils market: some people say that Castelluccio Lentils are better, Castelluccio Lentils have a PGI designation, and Colfiorito is better known for its potatoes.
