Corn Relish Recipe

This is a very good relish to add to your store of home preserves.

Number of servings: 8 cups

Estimated Prep Time: 20 minutes

Estimated Cooking Time: 45 minutes


6 cups Corn Niblets (frozen)
2 tablespoons Dry Mustard


Combine ingredients in a large pot, bring to the boil, reduce heat and simmer uncovered for half an hour. Stir occasionally.

Ladle into hot, sterilized mason jars, and seal them leaving headspace of 1/4 inch (5 mm.)

Process 15 minutes in a boiling water bath.

Recipe notes

Non-iodized salt is best for preserving, but use what you have.

If you are using a coarse sea salt, increase salt amount to 2 tbsp.
