Esther's Olives Recipe

This is a guideline on how to process fresh, off-the-tree olives at home, from a friend in Israel.

Estimated Prep Time: 30 minutes



Soak your fresh olives in plain water for 5 days, changing the water every day.

Then drain the olives completely. Put olives in a large, glass airtight jar with a lid, and add enough fresh water to cover the olives. For every 8 oz (250 ml) of water that it takes to cover them, stir in 1/2 teaspoon of salt.

Then also add, to taste:

bay leaves;
whole black peppercorns;
dash of a dry red wine for color;
bit of oil to float on top.

Put the lid on the jar, and leave on countertop for 2-4 weeks. Test regularly after 2 weeks for readiness.
