Fish Fumet

A Fish Fumet is a concentrated flavouring essence to be used as a flavouring in dishes or sauces.

A fish stock is first made by simmering trimmings from a fish (head, fins, bones) in water, then reduced greatly in volume by evaporation through simmering.
