Fish Slice is a cooking spatula (aka "flipper") with slots or slits in it, allowing liquid or fat to drain a bit off the food being lifted.
When the food is finished cooking, you just raise the food in the air on the slotted flipper for a few seconds, allowing some drainage to occur.
It is also just called a "slice."
