Prospect Potatoes are oblong, with buff-coloured skin with some flaking, and pale yellow flesh.
They are promoted as all-purpose for direct to consumer sales and for processing into French Fries (aka chips in the UK.)

Prospect Potatoes were developed in 1990 by Joyce and Robert Coffin, in Kensington, Prince Edward Island, Canada, from a cross between Shepody and Russette potatoes.
