Sambal Dabo Lilang is an uncooked Indonesian relish made from chopped onion, tomato, and red and green chiles, flavoured with fresh basil and lime zest.
It has a hot but fresh taste.
You let the flavours marry for several hours before using.
Cooking Tips
1 medium sized onion
1 small tomato
1 teaspoon fresh basil
3 limes
1 each of a small hot red chile and a small hot green chile
Peel the onion, cut it into thin slices, cut the rings so that you end up with strips, and toss into a bowl.
Chop up the tomato finely, add to the bowl.
Mince the basil, add to the bowl.
Zest 1 of the limes, add the lime zest to the bowl.
Juice all 3 of the limes, add the juice to the bowl.
Cut the chiles open, remove and discard the seeds, cut the chiles into thin strips, add to the bowl.
Stir everything together well, cover the bowl and place in the fridge for at least 3 to 4 hours to allow the flavours to marry. Stir at least once during that time. You may even wish to make this a day ahead.
