Scottadito is strips of lamb.
It’s not really a cut, just a way of presenting and eating. They are meant to be eaten with your hands.
They can be “abbacchio scottadito”, which are rib strips, grilled quickly, or “Costolette scottadito”, which are small, thin cutlets, either fried or grilled.
Language Notes
“Scottare” in Italian means “to scorch”; “ditto” means “finger”. Thus, the name means “finger scorchers”. The implication is that they’re so good you’ll want to eat them straight off the grill or out of the pan, while they’re still very hot.
