Shio-Zuke is a Japanese term for vegetables pickled using salt.
The vegetables can be cucumbers, daikon radish, Napa cabbage, baby carrots, burdock root, etc.
The items to be pickled will be layered with salt, then pressed down with a weight to create a brine which does the pickling.
