Somerset Blue Cheese



There are two cheeses called Somerset Blue.

One is actually a blue cheese. It is semi-firm, and yellowish from the rich Jersey Cow milk used. The rind has a light dusting of white mould on it.

The milk is unpasteurized, and curdled with vegetarian rennet.

It is made by the Exmoor Cheese Company at Willets Farm, Taunton, Somerset, England.

The second cheese called Somerset Blue is completely different. It is a layered cheese.

It consists of 4 layers of Somerset cheddar cheese, with 3 layers of St Agur soft blue cheese between. It is sold coated in black wax and is made by the Ilchester Cheese company in Ilchester, Somerset, England.
