A seasoned salt used in Chinese Szechuan cooking.
It consists of 1 part salt to 1 part ground Szechuan Peppercorns.
Cooking Tips
To make 2 tablespoons of Peppersalt:

- 1 tablespoon salt
- 1 tablespoon Szechuan Peppercorns
Toast salt and the peppercorns in a pan over low heat for 5 minutes, stirring frequently. Remove from heat, let cool. Grind to a fine powder (use either a blender, a mortar and pestle or a spice grinder). After that, it’s ready to use.
You can use either coarse salt or ground salt, but try to use uniodized salt as the iodine in iodized salt would affect the flavour.
To have enough to have on hand for future use, just double or triple the quantities that you are toasting. Store in a tightly sealed container or jar.
