According to Allied Laboratory Services, Vivaldi Potatoes have 26% fewer carbohydrates than the average potato. [1]
They are being grown (as of 2007) in the UK and in Israel, to supply the British market year round.
They are promoted as all-purpose potatoes for the consumer market.
History Notes
Vivaldi Potatoes were developed by a company known as Naturally Best of Lincolnshire and HZPC Holland B.V. of The Netherlands.
Research started in the early 1990s, and took 9 years.
Introduced in the UK in 2001.
