Huakaroro Potatoes

Huakaroro Potatoes are long, large-sized potatoes with an uneven, knobbly surface. They have yellow skin with pink flushes with brown dots and deep set potato eyes.

Inside, they have yellow flesh.

These are waxy potatoes, that retain their shape well when boiled, and even hold their shape in stews.

Huakaroro Potatoes originated in New Zealand.
