Killeen Farmhouse Cheese

Killeen Cheese is made by Killeen Millhouse outside Balinasloe, Ireland.

It is a firm, Gouda-style cheese. Inside, it is cream-coloured with small holes.

There are several versions including using goat’s milk, (raw milk or pasteurized), pasteurized cow’s milk, or various flavoured permutations of those. The milk is curdled with rennet.
