Lamb Blade Roast is cut from the back end of a lamb shoulder roast.

Cooking Tips

It can be braised.

It can also be dry roasted, provided that you cook it not too much more than the safe temperature for lamb (160 F / 71C.) If you dry roast it much beyond medium, you have to be very careful that it doesn’t toughen up on you.
