Sweet Pimento Butter is butter blended with sweet peppers (red or green) that have been completely softened through gentle simmering in butter.
It’s then pressed through a sieve.
It’s used as a garnish for cold hors d’oeuvres and as a flavouring for some sauces.
Cooking Tips
Proportions: 150 g (5 oz) sweet peppers to 200 g / 7 oz (1 cup minus 2 tbsp) butter.
