Feta and Zucchini Fritters
A tasty way to use up zucchini. Excellent for freezing.

Ingredients
1 pound Zucchini
grated
1 bunch Green Onions
chopped
½ pound Feta Cheese
crumbled
1 clove Garlic
chopped
2 Eggs
beaten
½ cup Flour
½ teaspoon Salt
4 tablespoons Olive Oil
Instructions
Grate zucchini and drain and pat dry in paper towel.
In a largish bowl, mix the zucchini with any herbs you want to use, the garlic, egg, flour and salt.
Form in patties (about 15) and fry in the olive oil until golden.
Notes
Add some dried herbs, such as basil and parsley, to flavour.
