1 Onion
large, chopped
1 ½ tablespoon Oil
2 cloves Garlic
crushed
½ teaspoon Chili Powder
1 teaspoon Cumin
ground
½ teaspoon Coriander
ground
½ teaspoon Ginger
ground
1 tin Canned Tomatoes
chopped
1 tablespoon Tomato Paste
2 tins Chickpeas
1 ¾ cup Vegetable Stock
Instructions
Heat oil in a large saucepan over medium heat, fry onion in the oil until soft. Add garlic and spices and cook for 5 minutes.
Add remaining ingredients and bring to the boil, then cover and simmer for one hour.
Notes
Use tins approximately 14 oz / 400 g in size.
