Ingredients
1 Red Onion
large, sliced thinly
2 tablespoons Oil
1 clove Garlic
chopped
pinch Chiles
crushed, dried
½ cup Cranberries
3 tablespoons Brown Sugar
1 teaspoon Orange Zest
1 Orange
juiced
½ teaspoon Thyme
ground

Beetroot
cooked, chopped finely
2 teaspoons Balsamic Vinegar
Instructions
Heat oil in a saucepan and cook the onion until soft but not brown. Add garlic and chiles (optional) and cook for 3 to 4 more minutes.
Add sugar and cranberries and cook until cranberries start to soften, then add the orange zest and juice and thyme and simmer for 10 minutes.
Stir in the beet, heat, add the vinegar, and salt, pepper and more sugar to taste. If too thick, thin with a few tablespoons of water. Allow to cool.
