There are two varieties of Beans called Bayo Beans, a Mexican version and a Louisiana version.
This one, the Louisiana bean, is related to Cranberry beans, and has a pinky-beige background with maroon speckles.
Bayo Beans (Louisiana) cook up firm, but smooth.
