Bismarck Herring

Bismarck herring is pickled herring fillets that have been cleaned, had head and tail removed, but had the skin left on.

They are cured in brine, then pickled in a mixture of vinegar, sugar and salt, with flavouring from onion, dill and other herbs. Some brands may add slices of cucumbers and carrots to the pickle.

Sold in chiller sections of stores in jars or tubs.
