Dark Brown Sugar is white, refined sugar that has been coloured on the outside of the sugar granules with molasses, which also gives it flavour.
More molasses is used than is used in colouring “light brown sugar”, so the colour and flavour are more pronounced.
Substitutes
1 cup (6 oz / 170g) light brown sugar plus 1 tablespoon molasses;
1 cup granulated (8 oz / 225g) white sugar with 2 tablespoons molasses
