Hunza Apricots

Hunza Apricots are small, round apricots grown in the Hunza valley in Pakistan.

They are sweet and fragrant.

Hunza Apricots are left to dry on the tree then harvested. They end up hard and brown, with a flavour like toffee, but can’t be eaten like this. Hunza Apricots have to be cooked briefly.

Cooking Tips

Cover the dried Hunza Apricots with water (just enough to cover.) Sprinkle with brown sugar, let soak overnight. Then bring water to a boil, lower to a simmer, and simmer for 2 minutes. Remove from heat, let cool.

‘It is to be regretted that men of science do not interest themselves more than they do on a subject of such vast magnitude as [food]; for I feel confident that the food of a country might be increased at least one-third, if the culinary science was properly developed, instead of its being slighted as it is now.’ — Alexis Soyer (French chef. 4 February 1810 – 5 August 1858)
