Ivory Lentils

Ivory Lentils are black lentils that have had the black skin removed.

They are ¼ inch (½ cm) wide, and are a creamy white colour.

They have a mild, earthy flavour.

They are popular in southern India, where they are often ground into a flour mixed with ground rice.
