Capones Chiles

Capones Chiles are dried, red jalapeño peppers that had their seeds, and sometimes their inner ribs, removed before drying.Red jalapeño peppers are green ones that have been allowed to fully ripen to red. Language Notes “Capone” means castrated, referring to the seeds being cut out.

Smoked Chiles

Many chiles are treated with smoke both to preserve them and to enhance their flavour. Oftentimes a smoked chile pepper is given a name different from when it is fresh. The best known smoked chile in our times is perhaps the chipotle pepper.
