Chop the tomatoes, onion and garlic, whiz in a blender till you have a coarse sauce. Heat oil in medium-sized saucepan, add the tomato mixture and cook for 10 minutes, stirring occasionally.
Add the remainder of the ingredients, and simmer for an additional 15 minutes.
This is meant to be served hot (in temperature) with cooked dishes.
Notes
As this sauce is going to get cooked, you can use tinned tomatoes.You can use a chicken stock instead of a vegetable stock.
