Tomato Cooked Sauce Mexican-style
A dead-easy recipe for a tomato sauce to be used with Mexican dishes.
- Chop the tomatoes, onion and garlic, whiz in a blender till you have a coarse sauce. Heat oil in medium-sized saucepan, add the tomato mixture and cook for 10 minutes, stirring occasionally.
- Add the remainder of the ingredients, and simmer for an additional 15 minutes.
- This is meant to be served hot (in temperature) with cooked dishes.
As this sauce is going to get cooked, you can use tinned tomatoes. You can use a chicken stock instead of a vegetable stock.
