This has nothing to do with Bénédictine liqueur. Rather, it signifies cod in some form:
- A main dish served with very small savoury tarts garnished with a mixture of salt cod and truffles. If fish is being served, there is also a white wine sauce. If eggs, a cream sauce;
- A dish with a purée of salt cod and potato in it;
- A purée of salt cod, garlic, oil and cream.
Language Notes
During Lent, cod was eaten a great deal; hence, the Larousse Gastronomique speculates, the religious reference to the Benedictine monks.
