À la Polonaise

Usually means 1 of 2 things:

  • A dish, usually vegetable, topped with a mixture of minced parsely, chopped boiled egg, and breadcrumbs fried in butter. The vegetables are often cauliflower or asparagus;
  • Alternatively, it can mean a sauce made of sauce velouté mixed with horseradish, lemon juice and sour cream.

    Means “in Polish style”.
