Chocolate Truffles

Chocolate Truffles are chocolate candies, named because they are designed to resemble mushroom truffles.
To make them, a ganache paste, made of chocolate, cream and butter is shaped into small rounds, then dusted with cocoa powder to simulate the earth that truffles are found in.
The ganache’s chocolate flavour may be enhanced with other flavorings such as hazelnut, orange, etc.
History Notes
Chocolate Truffles were created and named by M. Dufour in Chambery, France in December 1895.
