Conestoga are oblong, slightly flattened potatoes with white skin with some flaking, and white flesh.
They are marketed as all-purpose potatoes good for both consumer use and for processing when harvested early into potato chips (aka crisps in the UK),
Some warnings are seen about its glycoalkaloides levels making it unsuitable for potato chips.
History Notes
Conestoga Potatoes were developed jointly by Agriculture Canada and the University of Guelph (in Guelph, Ontario, Canada) in 1971 from two potatoes referred to as “G7063” and “G6652.”
During development, the potato was referred to as “G712-1.”
Released 1982.
