Demerara is a coarse sugar with yellowish-brown crystals.
It is less sweet than white sugar, but makes up for it with a caramel or toffee aftertaste.
In many parts of the world, demerara is sold unpurified (see also: Raw Sugar).
In North America and the UK, however, it has to be sold refined, because the unpurified state may contain moulds.
Some cooks feel that the unpurified form of it has the best taste.
