Devils On Horseback

Devils On Horseback are very similar to Angels on Horseback.

They are an appetizer made by wrapping something in bacon.

There are several versions.

    • Stuff the cavity of a pitted prune with a bit of chutney, wrap a piece of lean bacon (back bacon) around each prune, and bake for about 8 minutes in a hot oven. Serve on buttered toast points, sprinkled with chopped watercress;
    • Stuff a pitted prune with an unblanched almond, wrap a piece of lean bacon (back bacon) around each prune, and bake for about 8 minutes in a hot oven. Serve on buttered toast points, sprinkled with chopped watercress. Use chutney as a side sauce when serving;
    • Sautéed chicken livers cut in thirds, wrapped in streaky (aka American bacon), popped under the broiler or fried for about 3 minutes, then served on buttered toast points with a sprinkle of black pepper, cayenne and paprika;
    • Puréed chicken livers, stuffed into the cavity of a pitted prune, then wrapped in bacon and fried.
