Elicoidali

Elicoidali are medium-sized tubes of ridged pasta.

The ridges spiral gently up and around the tube.

This pasta is used with tomato or cheese-based sauces.

It holds its shape well when cooked.

Cooking Tips

Best if just cooked until tender to the bite so that a slightly chewy element is added to them.

Substitutes

Another tube-shaped pasta, such as penne, that has ridges in it, such as penne rigate.

History Notes

Originated in Naples, Italy.

Language Notes

The name means “helix” in English. The helix reference is to the spiralling ridges. Can be referred to in English as “Helicoidal Pasta”.
