European Soldier Beans are longish beans. They have a white background. The reddish-brown markings around the eye (the centre of the side) are supposed to look like the figure of a toy soldier.

European Soldier Beans have a mild flavour, and keep their shape when cooked.

The markings will fade, though, unless the beans are slowly simmered.

The plant delivers high yields – 85 to 100 days from seed – and was popular in New England.

Cooking Tips

Simmer soaked beans for 60 to 90 minutes. Good for baked beans.

Equivalents

1 pound (450 g) = 4 to 5 cups, cooked

1 cup dry = 2 1/2 cups, cooked.
