A Fleskepannekake is a Norwegian “bacon” pancake.
To make it, bacon is fried up in a frying pan, then a pancake batter poured over top of it, as thick as a North American pancake batter, then the pancake is browned on the bottom, then flipped to cook the top.
Some recipes have you pour the batter in and then transfer to the oven to finish cooking.
They are usually made to about 4 inches (10 cm) round, by about ½ inch (1 cm) thick.
Fleskepannekake may be served with a salad for lunch, with a dollop of sweet preserve.
