Hondroelia Olives

Hondroelia are very large, oblong Greek olives, up to 5 cm (2 inches) long.The olives are slit, then brine cured for anywhere from several months up to a year, then packed in olive oil or in a combination of brine and olive oil.

The olives are pink and brown coloured, or green dappled with brown. The flesh is very meaty, with a mild taste that has a slight bit of bitterness in it.

From Astros in the state of Arcadia, Greece.

Cooking Tips

Can be used in delicate dishes without overwhelming the taste, as other olives might.

Language Notes

One of its synonyms is “Victoria Olives”. This shouldn’t be confused with “Victoria Olives”, the brand name of a range of olives sold in America.
