Mexican Bayo Beans are pale yellow with no markings.
Sometimes the name is used as the name for a grouping of beans.
The “Diccionario Gastronomía Mexicana” says that “Mexican Bayo Beans” is a synonym for “flor de mayo” beans. It could be that this is true for some parts of Mexico, but not others.
Sometimes the Mexican Bayo Bean is mixed up with the Louisiana bean called “Bayo”, which is a cranberry bean.
