Oliva all’Ascolana

Green or black Ascolane Olives are used to make this Italian olive dish. The olives are pitted, stuffed with a mixed meat and cheese mixture, rolled in egg and seasoned breadcrumbs, and deep fried. Nutmeg and cinnamon are often used as the seasoning for the breadcrumbs.

The olives are served hot. They can also now be bought frozen in stores ready to heat for use as quick party appetizers.

This is a specialty dish in Ascoli Piceno in the Marche.

The product received PGI status 14 November 2005 (European Commission Regulation No 1855/2005) as “Oliva Ascolana del Piceno.”

Language Notes

The old name for it was “la liva [i.e. oliva] fritta all’ascolana”.
