Pasilla de Oaxaca is a smaller, hotter variety of pasilla chile with thin walls. The pepper is 3 to 4 inches long and up to 1 ½ inches at widest point (10 cm x 4 cm.)
When dried and smoked, the chile is wrinkled, mahogony-red, and tastes somewhat fruity with a deep smoky taste.
In Oaxaca, the chile used in Mole Negro and in making Chiles Rellenos (stuffed chiles.)
