It will live about 3 years, and weigh from 3 to 12 pounds (1.5 to 5.5 kg), depending on where they live. It has oval spots on the back and tail. Before spawning, the males will develop a hump on their backs: thus one of their synonyms, “humpback.”
They have a mild taste and pink flesh. Almost all the catch goes to canning.
