Rice Beans are related to kidney beans. They grow on a dwarf bean plant.
Young pods can be eaten as a green been.
When mature, Rice Beans are small white uniformly-sized beans inside, only ¼ inch (½ cm) long, that look like very plump grains of rice.
Rice Beans cook relatively quickly, and hold their shape well. When cooked, they have a mild, vaguely bitter flavour, with a firm texture.
Cooking Tips
Don’t soak Rice Beans before cooking. Simmer for 15 minutes.
Rice Beans are good for salads.
