Sambal Manis

Sambal Manis is a dark, bright red hot sauce made in Indonesia from chiles, onion, tomato, spices, sugar and vinegar.

The chile peppers are ground up. In Indonesia, Palm Sugar will be used instead of white sugar (try dark brown sugar), and tamarind paste instead of vinegar.

It has a mild, sweet taste.

It is used as a condiment in cooking or at the table, or as a dip.

It can be bought in stores already made in bottles.

Cooking Tips

To make a simple, relatively authentic version:
5 mild red chiles, seeds & stems removed, ground
1 tablespoon Tamarind paste
1 tablespoon Palm sugar (dark brown sugar)
½ teaspoon salt
Mix. Can be stored in fridge for 3 to 4 weeks.
