They are marketed as all-purpose for direct to consumer sales

Shoshoni Potatoes were developed jointly by the United States Department of Agriculture (USDA) and the University of Idaho from a cross between Early Gem potatoes and a potato referred to as “B2913-24.”
During development, the potato was referred to as “A175-7.”
