A Tofu that in texture is halfway between Silken Tofu and Firm Tofu in texture and taste.
While there is no particular exact definition of what constitutes “Soft Tofu”, especially amongst manufacturers in the West, in general Soft Tofu is light and wobbly, though firmer than Silken Tofu. Its taste, though, will not be as delicate as Silken Tofu, making it better for use as a cooking ingredient than as a feature item all on its own, as you can do with Silken Tofu.
This Tofu can be whipped or blended, making it good for adding to scrambled eggs, dips, etc.
