Split Yellow Peas

Split Yellow Peas are Yellow Peas that have been split in half before sale.

They are mostly used to make soups, casseroles, or pease pudding. They can also be used in Indian cooking. You can get also them whole, but the split cook faster. The yellow peas have a grainier, heartier flavour than the green ones.

Cooking Tips

Will cook in about 30 minutes, and after that turn to mush, so test them as they approach the 30 minute mark and if they need them to stay intact for what you are making, be ready to whistle them out of the water.

Substitutes

Green split peas; lentils

Equivalents

1 pound (450g) Split Yellow Peas = 2 ⅓ cups = 6 cups cooked
