Su-Zuke

Su-Zuke is Japanese term for pickles made using vinegar, typically rice vinegar. The pickles can be any vegetables.

There is no specific recipe; the term just refers to the style.

As rice vinegar does not have the acidity of Western vinegars such as white vinegar, such pickles will not keep long. The method should be seen more as one adding texture and flavour than achieving long-term preservation.
