Texas Hot Gut Sausages are made of beef, seasoned with garlic, salt, black pepper and lots of hot cayenne pepper flakes.
They are cooked over pots in a smoking chamber on barbeques until the skin is wrinkled. They are sold at most places in Texas that serve barbeque.
Owing to their high fat content, you need to carefully break the casing open or a stream of hot grease will squirt out.
Two well-known brands are Elgin and “Chappel Hill.”
You can also fight Hot Guts made of beef and pork, or all pork.
