Vallarta Beans are small, yellowish beans with a tinge of green or pale yellow. Sometimes they may be almost white.
They have a small white eye on one side with a narrow brown ring around it.
Vallarta Beans cook up quickly, and are dense, a bit chewy, but not gummy.
They are good for purées, with cooked vegetable greens, in barbequed beans, or refried beans.
