Manchester Tart is a custard pie consisting of a pie shell, with a layer of jam on the bottom, with custard poured in and baked.
Some variations used puff pastry for the shell instead of short-crust. The jam can be strawberry, raspberry or blackberry.
Some call for the top to be sprinkled with desiccated coconut, others call for the coconut to be stirred in.
You bake the pie shell blind first for about 15 minutes.
This is very similar to Manchester Pudding, but Manchester Pudding uses a bread-pudding filling.
